    Our Philosophy is based on the search for quality

    What is apparently a simple way of making chocolate is actually a journey marked by passion for the search for perfect flavours, a symbol of absolute quality. We have explored the most remote corners of the planet. In Venezuela we found our travel companion, the world’s rarest fine cocoa, corresponding to only 0.001% of all the cocoa on the planet: the Criollo.

    In 2002, Domori invested in the Hacienda San José, bringing back six varieties of Criollo cacao to the palate and creating a universal heritage that is unique in its biodiversity.

     

    We have chosen the Criollo because it is purer and because we cultivate its precious and very delicate plants with intense passion.

    We grow them with care and we work their fruits with procedures that focus on protecting the natural flavour of cocoa beans, to result in unique tastes and unforgettable sensations.

    Every day at Domori’s facilities in None, Turin, the beans are processed using innovative and sustainable machinery, technology and production methods. For example, the fundamental roasting stage, which is performed at low temperatures to bring out the extraordinary aromatic notes of fine cacaos without losing their organoleptic features.

     

    To allow all cocoa lovers to get to know, enjoy and recognise this precious fine cocoa, we were the first to identify the typical characteristics of an excellent chocolate. Aroma, roundness, pureness and persistence are the foundations, as are terms of comparison, which have allowed us to rediscover and recover only the best crops.

    The emotions donated by a Domori plain chocolate are no less intense than those we experience when tasting a precious wine or an excellent espresso coffee.

    This is why it is important to be able to recognise them. To make this possible, Domori has drawn up a tasting guide, a magnificent map that will guide your senses through the discovery of pure chocolate essence and sublimate its experience.
